Welcome back to Cocktails & Dreams...where the bar is always open because it's at home! We're starting Season Two with a fresh and fruity cocktail perfect for early summer; a Strawberry Basil Gin Fizz. The ingredients are seasonal, the gin is local, and the cocktail is sublime. Strawberry Basil Gin Fizz Strawberry Puree 1 cup of strawberries 1.5 tablespoons of sugar (2 if your strawberries are tart) Cocktail – Makes two cocktails ⅔ cup strawberry purée 4 fresh basil leaves, torn into small pieces, plus more leaves for garnish 2 tsp fresh lemon juice 4 oz. gin 1 can club soda Mix the strawberries and sugar together at room temperature, and set aside for 15 minutes. Next, add the strawberries and sugar into a blender and blend until puréed. To cocktail shaker, add torn basil leaves and lemon juice – muddle gently. Fill a cocktail shaker halfway with ice and add the strawberry purée and gin. Shake vigorously until everything is combined, approximately 30 seconds. Pour into glasses with ice, and top with club soda to taste. Garnish with half a strawberry and basil leaves. Dive in! There is something about a gimlet that is both festive and timeless. Cranberry Gimlet 2 oz Paper Boat Gin 1 oz fresh lime juice 1 oz simple syrup 0.5 oz pure cranberry juice 2-3 dashes of elderflower bitters (or make elderflower simple syrup) Fresh cranberries and mint sprig to garnish Fill cocktail shaker with ice followed by all of the ingredients less garnish. Shake until thoroughly chilled and strain into a coupe. Garnish with fresh cranberries and mint. Dive in! Just as bright as Rudolph’s nose, this orange and cranberry gin & tonic is perfect to guide your sleigh into the holidays.
Rudolph’s G&T 2 oz Paper Boat Gin 2 oz Pure Cranberry Juice 2 oz Fresh-Squeezed Orange Juice 1 oz Simple Syrup Tonic Water Cranberries and orange slice for garnish. Fill your Copa glass with ice and add gin, orange juice, cranberry juice, and simple syrup. Top with tonic to taste. Garnish with orange slice and fresh cranberries. Dive in! This cocktail is like the Grinch without the sour outlook on Christmas!
Grinchy Gin Cocktail 2 oz Paper Boat Gin 1.5 oz Fresh Pear Juice 0.5 oz Lemon Juice 1-2 drops of DSB Bitters 1-2 drops of Cardamom Bitters Soda water to top Pear and thyme to garnish Add gin, pear and lemon juice, and bitters to shaker with ice. Shake well for 20 seconds. Pour into glass filled with ice. Top with soda water to taste. Garnish with pear and thyme. Dive in! The weather outside is frightful, but this sparkling holiday cocktail is so delightful!

Merry Gin Flip 1 oz Paper Boat Gin 0.5 oz Triple Sec 0.5 oz Irish Cream 1 whole egg 1 tsp maple syrup In a cocktail shaker, add all of the ingredients and dry shake vigorously for 30 seconds. Pour into a saucepan and gently heat over low heat. Stir frequently and do not bring to a boil. Pour into glass and garnish with cinnamon stick and light sprinkle of cinnamon powder. Dive in! Optional: rim glass with cinnamon sugar. Travel may not be in the cards this holiday season, but we’ll transport you to Italy with this fresh cocktail!
The Italian Greyhound 2 oz Paper Boat Gin 4 oz freshly squeezed grapefruit juice 1 oz Campari or Aperol Fresh Sage for garnish Fill your glass with ice and add gin, Campari, and grapefruit juice. Gently stir and garnish with fresh sage. Dive in! While it isn’t the night before Christmas yet, we still have visions of sugar plums dancing in our heads.
Dance of the Sugar Plum Fairy 1 oz Paper Boat Gin 0.5 oz Plum Simple Syrup (1/2 cup water, 1/2 sugar, plums) 0.5 oz Lemon Juice Prosecco to top Plum and Thyme garnish Make the plum simple syrup. Combine sugar and water and bring to a boil, remove from heat and add plums. Stir and let cool. In a shaker, combine gin, lemon juice, and plum simple syrup. Shake for 20 seconds. Pour into glass filled with ice and top with Prosecco. Garnish with plums and thyme. Dive in. This Cranberry Gin Fizz from @darngoodveggies is the perfect leftovers companion.
1 cup fresh cranberries 1/4 cup water 1/3 cup maple syrup 2/3 cup orange juice 1/2 cup pomegranate juice 1/4 Paper Boat gin Sparkling water Add cranberries, water, and maple syrup to a saucepan over medium heat. Being the mixture to a simmer and cook, stir frequently until cranberries are split and soft. Remove from heat and mash cranberries into a paste. Add the cranberry sauce and all remaining ingredients, except sparkling water, into a pitcher and stir to combine. Pour the mixture into 4 glasses filled with ice and top with sparkling water.
