Vegan Maple Whisky Sour

Break out that can opener and try something new this week!

Chris & special guest Savannah, are shaking up a vegan version of a classic Whisky Sour with a hint of maple syrup and lots of lemon and whisky. Join us in person this week at our Riverside Summer Series Festival.

Makes 2 cocktails
  • 2 ounces aquafaba (drained chickpea liquid)
  • 5 ounces whisky
  • 5 ounces lemon juice
  • 4 ounces maple syrup
  • 4 maraschino cherries for garnish
  • 2 thinly sliced orange wheels for garnish
 Method
  • Pour aquafaba into cocktail shaker and dry shake for 30 seconds to aerate aquafaba.
  • Add whisky, lemon juice, maple syrup to the shake and fill with ice. Shake with vigour for 45 seconds to one minute.
  • Gently pour sour into prepared rocks glasses and garnish with cherries and oranges.
  • Dive in!

Coconut Blackberry Gin Smash

Grab your muddler and lets get smashin'!

This week Chris is shaking up a deliciously refreshing Coconut & Blackberry Gin Smash with hints of lime and rosemary. Pairs perfectly with a beautiful day on the dock.

Ingredients
  • 2 oz gin
  • 1 oz cream of coconut (Coco Lopez)
  • .75 oz fresh squeezed lime juice (about 1/2 a lime)
  • Blackberries
Method
  • Muddle one or two blackberry in the bottom of a rocks glass, then add about 1/2 your glass  with crushed ice.
  • Shake the rest of the ingredients in your cocktail shaker with ice for 5-10 seconds.
  • Pour over the crushed ice and top with another scoop of crushed ice
  • Garnish with fresh blackberries and rosemary
  • Dive in!

Mint Julep

Teamwork makes the dream work!

Special guest and co-founder of WBC, James Innes, paddles in this week to make us a cocktail he has definitely made 100 times before. Our Mint Julep is the perfect cocktail to sip outside with friends after a long day on the river, and its almost as satisfying as James' ice crushing method.

​Ingredients
  • 6-7 mint leaves
  • 2 sugar cubes, or 1/2 ounce simple syrup
  • 2 1/2 ounces bourbon whiskey
  • 3 dashes Angostura bitters
  • Mint sprig, for garnish

Method
  1. In a Julep cup or rocks glass, lightly muddle the mint leaves in the simple syrup.
  2. Add the bourbon then pack the glass tightly with crushed ice.
  3. Stir until the cup is frosted on the outside.
  4. Top with more crushed ice to form an ice dome, and garnish with a mint sprig and a few drops of bitters (optional).
  5. Dive in!

Sparkling Lavender Lemonade

When life gives you lemons, make a cocktail!

This week, Chris is stirring up some delightful aromas of lemon, lavender and mint in this light and tart cocktail that has all the flavours of Summer. This Sparkling Lavender Lemonade will have you dreaming of a fresh and floral garden.

Ingredients
  • 2 oz Gin
  • 1.5 oz simple syrup
  • 3 oz fresh lemon juice
  • 3-4 mint leaves
  • Top with sparkling water to taste
 Method
  • In glass, add gin, simple syrup, lemon juice and mint. Gently muddle mint leaves.
  • Add lots of ice, top with sparkling water to taste, stir.
  • Dive in!

Blackbeard's Coffee - Two ways!

Cocktails for two, for one!

Say hello to your next Saturday morning sipper with this coffee and dark rum based cocktail. With two variations, Blackbeard's Coffee is sure to please everyone. Notes of nutmeg and vanilla make this cocktail smooth with a perfect balance of sweet sugar & bitter coffee.

Ingredients
  • 1 cup iced coffee
  • 1 oz Brown sugar syrup
    • ¼ cup brown sugar
    • ¼ cup water
    • ½ tsp vanilla
    • Pinch of nutmeg
  • 3 oz Dark rum
  • 1 oz canned coconut milk (shake can very well before opening)
  • Shaved chocolate and sprinkle of nutmeg for garnish
 
Method
Black
  • Add ½ cup iced coffee, ½ oz brown sugar syrup, 1 ½ oz dark rum to an ice-filled glass. Stir to combine.
  • Shave chocolate and sprinkle nutmeg on top.
  • Dive in!
Creamy
  • Add ½ cup iced coffee, ½ oz brown sugar syrup, 1 ½ dark rum, and ½ oz to canned coconut milk to an ice-filled glass. Stir to combine.
  • Shave chocolate and sprinkle nutmeg on top. 
  • Dive in!

Bee's Knees

Let's get shakin'!

This prohibition era cocktail, made with Paper Boat Artisanal Gin, is going to knock your socks off. The Bee's Knees delivers all the summery goodness with flavours like honey and lemon, and a floral aroma that will have you sinking into your favourite patio chair.

Ingredients
  • ½ ounce honey syrup (see step 1)
  • 1 ounce lemon juice (about ½ medium lemon)
  • 2 ounces gin
  • Lemon peel (bee shaped) and edible flower garnish
 
Honey Simple Syrup
  • ¼ cup honey
  • ¼ cup water

In a pot, combine honey and water. Over medium-low heat, gently heat the honey and water until honey is dissolved and mixture is easily whisked.
 
Cocktail
  • While your lemon is still whole, use a vegetable peeler (or knife if you’re comfortable) to peel off lemon rind for your garnish.
  • In a cocktail shaker filled with ice, combine gin, honey syrup, and lemon juice. Shake for about 25 seconds until the cocktail is very chilly.
  • Strain into a coupe and garnish with lemon bee and edible flowers.
  • Dive in!

This refreshing beer cocktail features Whitewater Brewing Co.'s High Tide New England IPA and delivers flavours of smoky scotch and fruitiness.
If you don't have the ingredients at home, stop by one of our pubs, and our friendly bartenders will gladly whip one up for you.

Ingredients
  • 1 oz Glenfiddich
  • ½ oz simple syrup
  • Juice of half a lime
  • ¾ oz egg whites
  • High Tide NEIPA from Whitewater Brewing Co. to top
 
Method
  • Add all of the ingredients to a shaker – shake dry for 10 seconds
  • Add ice and shake again
  • In a whisky glass, add ice until about ¼ full and strain the contents of your shaker into glass
  • Top up with High Tide until glass is full.
  • Garnish with lime twist
  • Dive in!

Whitewater Gin Caesar

Our Whitewater Gin Caesar is full of all the familiar flavours you come to expect in a high-quality caesar. But, the freshly grated horseradish gives it a fresh kick, and the black pepper in our Paper Boat gin lends a subtly spiciness.

​Bonus: The Whitewater Gin Caesar is loaded with tasty garnishes making this cocktail a drink and a snack!

Ingredients
  • 2 oz Paper Boat Gin
  • 0.25 oz Worcestershine
  • ½ of a lime; juiced
  • 2-3 drops of Tabasco
  • Walter’s Craft Caesar Mix
  • Rim Seasoning
  • Prosciutto
  • Sharp Cheese
  • Grated Horseradish
Method
  • Dip glass rim in lime juice & roll in your favourite rim seasoning.
  • Add ice, gin, lime juice, Worcestershire, Tabasco to glass & top with Caesar mix; stir.
  • Garnish with prosciutto, sharp cheese, & grated horseradish
  • Dive in!

Grapefruit Jalapeno Margarita

Citrusy, sweet, and spicy. The Grapefruit Margarita is what summer dreams are made of.

Put on your safety goggles, and dive into episode two with guest host Savannah!

Ingredients (per margarita)
  • 1-ounce fresh lime juice (~ 1 large lime)
  • 2 teaspoons jalapeno simple syrup
  • 1 thinly sliced jalapeño round
  • 2 ounces grapefruit juice (~½ large grapefruit, juiced)
  • 1 ½ ounces tequila
Chilli-Salt Rim
  • 1 tbsp Himalayan Rock salt
  • 1 tbsp chilli powder
  • 2 tsp sugar
  • Lime wedges
  • Small grapefruit wedges for garnish, optional
Method
  • First up, prepare glasses! Mix salt and chilli powder on small plate.
  • With a lime wedge, rim the glass with lime juice and gently roll lip of glass in chilli-salt rim.
  • Fill glass with ice.
  • In a cocktail shaker, combine lime juice, simple syrup and jalapeno slice (or two if you’re feeling spicy). Muddle jalapeno.
  • Add grapefruit juice, and ice. Close shaker and shake for 20-30 seconds.
  • Strain cocktail into prepared glass. Garnish with slice of jalapeno and grapefruit wedge.
  • Dive in!

Stawberry Basil Gin Fiz

Welcome back to Cocktails & Dreams...where the bar is always open because it's at home!

We're starting Season Two with a fresh and fruity cocktail perfect for early summer; a Strawberry Basil Gin Fizz. The ingredients are seasonal, the gin is local, and the cocktail is sublime.  Catch our weekly episodes on YouTube, IGTV, or Facebook!

Strawberry Basil Gin Fizz
Strawberry Puree
1 cup of strawberries
1.5 tablespoons of sugar (2 if your strawberries are tart)
 
Cocktail – Makes two cocktails
⅔ cup strawberry purée
4 fresh basil leaves, torn into small pieces, plus more leaves for garnish
2 tsp fresh lemon juice
4 oz. gin
1 can club soda

Mix the strawberries and sugar together at room temperature, and set aside for 15 minutes. Next, add the strawberries and sugar into a blender and blend until puréed.

To cocktail shaker, add torn basil leaves and lemon juice – muddle gently. Fill a cocktail shaker halfway with ice and add the strawberry purée and gin. Shake vigorously until everything is combined, approximately 30 seconds.

Pour into glasses with ice, and top with club soda to taste. Garnish with half a strawberry and basil leaves. 

Dive in!
