Presenting a new, soon-to-be staple, Whitewater Brew Pub cocktail you can make at home - the Pink Chill. Chris braves the cold November weather on the Ottawa River to bring you a delicious pink concoction, guaranteed to be a hit at all your gatherings this holiday season!

What You'll Need: 1.5 oz Paper Boat Gin
1.0 oz Limoncello
2.0 oz Cranberry juice
Half a lime
Half a lemon
0.5 oz simple syrup
Black currant bitters
Dried lemon slice, for garnish (+icicle if you have one handy!)

Step One: Add all your ingredients into a shaker over ice and shake.
Step Two: In a tumbler, add ice & pour in your shaken cocktail
Step Three: Garnish with a dried lemon slice (+ an icicle if you have one!)
Dive in!

'Gin'ger Snap

This week Brandon joins Chris at our Cocktails & Dreams riverside bar to make a delicious 'Gin'ger Snap - a cocktail that puts the gin in ginger. We're giving you the insider details on how to make one of our popular Lakeside Brew Pub cocktails at home! And, if you don't feel like making it, stop by, and we'll make it for you.

What You'll Need:
2 oz Paper Boat Gin
.75 oz Ginger syrup
Diced pear
Soda Water

For the ginger syrup:
1/4 cup sugar
1/4 cup water
5-6 Slices of ginger

Method: Prepare the ginger syrup.
Combine all ingredients in a pot and bring to a boil. Let simmer for 5 minutes, stirring occasionally. Let cool and steep overnight for maximum ginger flavour.

Prepare the cocktail:
  • In a shaker, add 1/4 of your diced pear, gin, ginger syrup and muddle. Once sufficiently muddled, fill your cocktail shaker with ice and a splash of soda water.
  • Shake vigorously until your cocktail is icy.
  • Strain into a rocks glass with ice and top with soda water.
  • Garnish with a round of ginger & a slice of pear

Cobden Chai Cocktail

Our iced Cobden Chai Cocktail offers comfy, cozy flavours perfect for autumn. Made with homemade brown sugar syrup, this cocktail a balance of spice and sweet that everyone will love.

What You'll Need:
1.25 oz Paper Boat Gin
1 oz Brown Sugar Syrup
1/4 oz lemon juice, fresh squeezed
3/4 cup Chai; room temperature
1 sprig of rosemary Cinnamon sticks, for garnish

For the brown sugar syrup:
1/4 cup brown sugar
1/4 cup water
1 tsp vanilla
Dash of cinnamon

Step One: Prepare the brown sugar syrup.
Combine all ingredients in a pot and bring to a boil. Let simmer for 5 minutes, stirring occasionally.
Remove from heat and let cool

Step Two:
To make the cocktail, add all ingredients, except the rosemary and cinnamon sticks, to a cocktail shaker with ice.
Shake until very cold.

Step Three: Strain into a cocktail tumbler prepared with ice. Garnish with a sprig of rosemary and cinnamon sticks. Dive in!

Fig Whisky Sour

What's better than a Whisky Sour, you ask? The Fig Whisky Sour, of course. This easy whisky sour recipe is perfectly balanced, sweet-tart, and figs are in season, making this cocktail the perfect holiday sipper!

Cocktail Ingredients:
  • 2 oz Whisky
  • Juice of half a lemon
  • 0.75 oz Fig Syrup (recipe to follow)
  • 0.5 oz Aperol
  • 1 egg white (make it vegan with 1 tbsp of chickpea aquafaba)
  • Sprig of rosmary, sliced fresh figs for garnish

Fig Syrup Ingredients:
  • 1/2 cup fig preserves (we used a fig merlot preserve - delish!)
  • 1/2 cup water 

Step One:
  • Prepare the Fig Syrup. In a saucepan over medium-high heat, add 1/2 cup water with 1/2 cup fig preserves.
  • Bring to a boil and stir the mixture consistently for about 10 minutes.
  • Remove from heat and allow to cool.
  • Pour Fig Syrup through a fine mesh strainer to filter out seeds. Store syrup in a mason jar in the fridge. 
Make the Cocktail:
  • In a cocktail shaker, add whisky, fig syrup, egg white (or aquafaba), lemon juice, and rosemary.
  • Muddle the fresh rosemary to release the herbaceous aroma and flavour. Dry shake (without ice) until combined.
  • Next, add ice and shake for 20 seconds until your cocktail is frosty and frothy.
  • Add ice to your cocktail glass and strain your cocktail into your prepared glass.
  • Garnish with a sliced fig and a sprig of rosemary.
  • Dive in!

Paper Boat Plum Mule

Presenting our twist on the famous Moscow Mule - the Paperboat Plum Mule! We think you'll love Whitewater's take on this classic. 
We've upped the flavour factor with plum, gin, and a twist of lime. 
Check out the full recipe below:
  • 2 oz plum juice/puree  
  • 2 oz ginger beer
  • 1.5 oz. Paper Boat Gin
  • Juice of 1/2 lime
  • Crushed ice

Garnish:
  • Lime slices
  • Plum slices

Method:
Fill a copper mug with crushed ice.
Pour in the plum juice and ginger beer.
Add in the vodka and lime juice.
Top with lime and plum slices, if desired!

Dive in while cold!
